Buffalo Foodies: Flying Bison (Tim Herzog)

Today we are proud to introduce our newest Buffalo Foodie, Tim Herzog, who is the owner of Buffalo’s own Flying Bison Brewery.  If you didn’t know, Flying Bison is Buffalo’s only true stand alone brewery, our first since Iroquois Brewery shut down in 1972.  The brewery is located on Ontario St where you can walk in and purchase some growlers of their beers (and even their Root Beer) and see how they make it from start to finish.  I can honestly say that their Baron von Bisonfest is probably the best Marzen/Oktober-fest style beer I’ve ever tasted.  You’ve probably seen 6 packs of their flagship beer Buffalo Lager on sale at either Tops or Wegmans or seen one of their beers on tap at many local bars in the area.  Next time you see a 6 pack I highly suggest you give it a try.

Being a big fan of their beer, I reached out to Tim about being a Foodie and here is what he had to say about his favorite places to eat/hangout in Buffalo……

Where are some of your favorite places to eat?

Tim: There are so many great spots that Betsy and I tend to go by what we’re hungry for; Shango for Cajun, Ulrich’s or Scharf’s for German, Pizza Plant for a Pod, Crazy Jake’s for a giant Salad, etc., etc, There are so many.

Where do you like to grab a drink and hang out with friends?

Tim: By the time I get home from work most of my friends are turning in. I can meet an old friend or make a new one in any of the great local spots that carry Flying Bison. They tend to have an atmosphere for conversation great food, and fresh beer. On Sunday afternoons during the summer there is frequently an impromptu on our front steps. Those are some of Betsy and my favorite times of all. It is a great mix of neighbors, family, our (adult) kids enjoying some beer, food, great weather, and marvelous company.

If you had a friend visiting from out of town, where would you go to show them a good time in Buffalo?

Tim: We usually wind up somewhere “downtown” because sightseeing is involved. I really like driving visitors around to show them that Buffalo is not as run down as folks elsewhere like to think. So dinner and beers tend to be at Century Grill, Ulrich’s, anywhere on Elmwood, etc.

What are some of your favorite food memories from growing up?

Tim: When I was a kid, one of my favorite dinners was Potato Pancakes during Lent. My Dad grated the potatoes by hand and we would eat them faster than he could make them. My maternal Grandmother lived with us for several years and was a great “from scratch” baker. When she and my Mom would bake Christmas cookies they would let us roll out dough and frost them. I can still smell Grandma’s Frosted Chocolate Cookies.

Is there anything you wish Buffalo had more of (food wise) ?

Tim: NO! If you can’t find it here; you’re just not looking.
