A couple weeks ago we had Chef Bruce Wieszala over to the Buffalo Eats studio to talk about his newest project, COPPA Artisan Cured Meat. Bruce has started a kickstarter campaign to help raise some funds to get his store (on Elmwood next to Nickel City Cheese) opened a little quicker, check it out and take a look at some of the awesome rewards. When not curing delicious meat pork products (see pictures below, kickstarter video) Bruce can currently be found in the kitchen at Carmelo’s in Lewiston. We talked about his start in the culinary world, cooking at a Cheesecake Factory in Atlanta and his bumpy path back to Buffalo.
