I first heard about Chef Frank Mercado after recording our first podcast with Christa Seychew, I was immediately intrigued by his unique job and I hoped to have him come down to the studio. Frank works for Sodexo, a company that is in charge of the cafeterias in the M&T Building in downtown Buffalo. Frank is the Executive Chef for the Executive Dining Room, creating a constantly changing breakfast and lunch menu for M&T’s Officers and Executives. We talked about his start in the culinary world, how he found his way to Buffalo from Pennsylvania and his experience as a contestant for Nickel City Chef this year.
