I’ll admit that we weren’t familiar of Chef Brian Mietus until he was named as a Nickel City Chef a couple years ago. We of course knew, about Bacchus because of it’s location on Chippewa but foolishly assumed that a restaurant located on a street that’s normally filled with annoying drunk kids couldn’t be any good. When we finally visited Bacchus in November 2011, we realized how wrong we were (it’s pretty damn fantastic, see show notes for our review). We invited Brian to the studio to talk about his beginnings at the hot dog dive Curt’s Stop Inn to his travels around the US and how he finally settled back in Buffalo. We also discussed his role as a Nickel City Chef, his thoughts on mentoring the young kids in his kitchen and some new changes that are coming to Bacchus next year.
